- 1 Eggplant
- 1 Avocado
- Salt & Seasoning of Choice
Preheat the oven to 350 and place the whole eggplant into the oven for 45 min to an hour. (Closer to 45 if small, an hour if larger). Take the eggplant out of the oven and let cool in the refrigerator for at least half an hour but up to overnight.
Slice the eggplant into “toasts” and peel skin if you’d like.
Add 1/4-1/2 avocado, mashed.
Sprinkle with good salt or seasonings of your choice and enjoy!
