Cauliflower Fried Rice With Chicken
Veggie & Protein Packed Fried Rice is every Chinese lovers dream! You control the amount of sodium & the amount of veggies! This recipe is 2B Mindset Approved, Hubby Approved, & Budget Friendly.
- 1 Package (12-14oz) Frozen Cauliflower Rice
- 1 Package (12-14oz) Frozen Pepper Mix
- 4 Eggs
- 2-4 Tbsp Olive Oil
- 1/4 Fresh Red Onion Chopped
- 12-16 Chicken Pieces
- 2-3 Tbsp Soy Sauce
*With frozen veggies there may be a lot of excess water; do not be afraid to drain the veggies and pour them back into the pot to continue cooking. I drained the veggies 2 times before serving.
1-2Tbsp of olive oil in pan; add chicken bites & fresh red onion cook for 7-10 minutes stirring 1-2 times; add 1-2 tbsp soy sauce; after the 7-10 original minutes add your 4 eggs and allow them to cook & stir until cooked.
1-2Tbsp of olive oil in pan; add cauliflower rice and steam for 5 minutes before adding peppers; then steam for another 5-7 minutes. (I would drain after the 7 minutes and place back in pan) Add soy sauce & keep warm until serving.
After eggs are cooked add that mixture to the veggie mixture stir and serve.
