Avocado Zucchini Alfredo With Shrimp

Ingredients

  • 1 Medium Ripe Avocado (Mashed)
  • 1/4 Cup Reduced Fat Plain Greek Yogurt
  • 1/4 tsp. Ground Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • Nonstick cooking spray
  • 24 Raw Medium Shrimp
  • 4 Medium Zucchini
  • 2 tsp Grated Parmesan Cheese

Directions

  1. Combine avocado, yogurt, 1/4 tsp pepper, 1/2 tsp garlic powder, and 1/4 tsp onion powder in a medium bowl; mix well.

  2. Heart large skillet, lightly coat with cooking spray on medium heat.

  3. Add shrimp; season with remaining 1/4 tsp. pepper, remaining 1/4 tsp garlic powder, and remaining 1/2 tsp onion powder, cook and stir frequently for about 1 minute.

  4. Add zucchini; cook, stir frequently for 2-3 minutes drain excess liquid from skillet.

  5. Add avocado mixture; cook, sir frequently for 1-2 minutes or until shrimp is cooked through.

  6. Evenly divide zucchini mixture between two serving plates and top with cheese.
